1. After cleaning the brisket, cut it into uniform size, then soak it for more than 10 minutes, and then wash the blood.

2. Put the washed beef brisket into the pot, add 2 slices of ginger and a spoonful of cooking wine in, so as to remove the fishy smell. After the water boils, cook for about 5 minutes, remove the brisket, remove the blood foam, and clean the brisket.

3. Heat oil in a wok put ginger, onion, and garlic into the wok and saute until fragrant, then put the processed beef brisket into the wok and stir-fry, about 2 minutes, you will smell the aroma of the beef brisket.

4. Add the stir-fried beef brisket to the water, then pour it into a casserole or soup pot.

5. Bring the water to a boil over high heat, then turn to medium-low heat and simmer slowly for 40 minutes. If you want to make it softer, you can take a little longer.

6. Add carrots and potatoes and simmer for 15 minutes, then turn off the heat. Add an appropriate amount of curry cubes until the curry cubes are completely dissolved, add the shallots (optional), and cook for 3-5 minutes over low heat, stirring gently while cooking to prevent sticking to the pan.
