Yi Bingshou, a poet and calligrapher from the Qing Dynasty in Huizhou, Guangdong, had a feast for guests. The chef mistakenly put the boiled egg noodles into boiling oil in the rush. After picking it up, he had to soak it in soup before serving it. Unexpectedly, this kind of egg noodles won unanimous applause from the guests and hosts and became a very refreshing serving dish.
