Put the beef tendon in boiling water to scald the blood, rinse and cut it into pieces. 5Boil the rice bowl with ginger slices/star anise/laurel leaves/chili, put in the beef and simmer for about an hour, add soy sauce, salt, cooking wine, and continue to simmer for an hour until crispy. Boil the noodles, drain and place them on a plate, add shredded onion ginger/beef, pour the soup, and mix with a little red oil.
