Qiongshan is a place name. In Hainan Province, there is a famous local dish called "Qiongshan Tofu". A friend just happened to be in Hainan and was planning to open a restaurant. I asked how to make this dish authentic. People say it is tofu, but in fact, it has no tofu ingredients at all. It is steamed with egg whites. After steaming the "tofu", the surface should be accompanied by fried side dishes. The side dishes can be freely chosen, which can be a few seasoned shrimps, or seafood and diced fruits. The key is to be salty. The most standard side dishes are scallops, chicken, and kale stalks, all diced and fried, beaten and seasoned.
